Jimmy Doherty compares processed ham to natural ham. Doherty builds a device to inject liquid into pork meat. He mixes preservatives, salt, sugar, water, phosphates, and sodium nitrate into brine. Doherty injects the liquid into the meat and tumbles it in a cement mixer.
